Parsnips are in the carrot family. Their flavor is known to be sweet and spicy. Parsnips do require a longer growing season. To get the best flavor out of your parsnips, expose them to a few weeks of cold temperatures before harvesting. While parsnips can be eaten raw, they are often used by boiling, roasting, baking, or in soups and stews.
